Il Sorvegliante


Toscana Rosso IGT

Blend of Cabernet Sauvignon, Cabernet Franc and Petit Verdot aged separately in barrique for 12 months, then in stainless steel and finally in bottle. Il Sorvegliante offers a wide variety of aromas, with currant, vegetal and quinine tones.

 Variety: 33% Cabernet Franc, 33% Cabernet Sauvignon, 33% Petit Verdot

Appellation: Toscana Rosso IGT 

Vinification: maceration and fermentation at controlled temperature (28° C) for 3 weeks, with pumping over

Aging: in French barrique for 12 months. The wines are then blended and spend 6 more months in stainless steel tanks before bottling. Bottle aging: at least 6 months

Color: intense ruby red

Scent: ample aromas with notes of forest floor, followed by tobacco, quinine and balsamic tones.

Flavor: austere, with assertive tannins, balanced by a good body and restrained softness. 

Alcohol content: 13.5% vol.

Total acidity: 5,46 gr/l

Dry Extract: 37

Service temperature: 18° C

Food pairings: red meats, roasts, braised meats, game, aged cheeses
